Spaghetti Squash with Cashew Cream Sauce

So I just recently discovered the amazing spaghetti squash and it’s vast array of ways to be used in cooking. If you haven’t had it, I highly recommend it. You can eat it plain with a pinch of salt and pepper, or jazz it up in a million different ways.

This recipe is extremely simple, super hardy and delish. You can substitute or add so many things to it if you’re feeling fancy (like sauteed spinach or roasted cherry tomatoes).
